MINT CHOCOLATE CAKEThis is a delicious minty chocolate cake made with... beets! 1 1/2 c. sugar2 extra large eggs1 c. oil2 c. pureed beets6 Tbsp. cocoa1 1/2 tsp. soda1 3/4 c. unsifted flour3/4 tsp. peppermint extract1/4 tsp. salt1 tsp. vanillaCombine sugar, eggs, oil and beets and mix. Stir in cocoa, flour, soda, salt and extracts. Beat for 2 minutes at medium speed. Turn into 9" square buttered pan. Bake at 350F. for 45-50 minutes, or until toothpick comes out dry when inserted in center. If desired, spread with chocolate mint icing or frosting. However, this cake is fabulous just as it is.
