Holiday Angel Food Cake E-mail

 

HOLIDAY ANGEL FOOD CAKEIngredients: 1/4 c. well drained, chopped red maraschino cherries1/4 c. well drained chopped green maraschino cherries1 1/4 c. sifted cake flour1 3/4 c. sifted sugar3/4 tsp. salt1 1/2 c. egg whites1 1/2 tsp. cream of tartar1 tsp. vanilla extract1/4 tsp. almond extractCut maraschino cherries into small pieces and measure 1/4 c. of each. Drain on absorbent paper about 2 hours, changing paper once or twice. Sift cake flour and 3/4 c. sugar together 4 times. Beat egg whites and salt until foamy. Sprinkle cream of tartar over egg whites and continue beating until round points form. Fold in remaining sugar a little at a time. Add extract. Gradually fold in sifted dry ingredients, being careful to fold thoroughly after each addition. Fold in cherries. Pour into 10" ungreased tube pan. Bake at 275F. for 50 minutes. Increase heat to 325F. and bake another 10 minutes to brown or until done. Invert in pan and cool for 1 hour.
