Cranberry Tea Loaf E-mail

 

CRANBERRY TEA LOAFIngredients: 2 c. sifted flour1 c. sugar2 tsp. baking powder1/2 tsp. baking soda1 tsp. saltGrated rind from 1 orange3/4 c. cold strong tea2 Tbsp. cooking oil1 egg, beaten1/2 c. chopped nuts1 1/2 c. fresh cranberries, halvedPreheat oven to 350F. Sift flour, sugar, baking powder, baking soda and salt together into mixing bowl. Add grated orange rind. Combine tea, oil and egg and beat with fork. Add to sifted dry ingredients, stirring only enough to blend. Add nuts and cranberries, combine with as few strokes as possible. Spoon into greased 9" x 5" x 3" pan, pushing batter well into corners. Let stand 20 minutes. Bake 50 minutes, or until toothpick inserted into center comes out clean. Remove from pan onto cooling rack. Wrap in foil for storage.
