WATERCRESS & FENNEL SALADIngredients:1 bunch watercress1 bunch fennel, thinly sliced1 clove garlic, minced6 to 8 scallions, minced4 shallots, minced2 leeks, thinly sliced1/2 tsp. each of dried sage and borage, or a few fresh leaves1 sprig rosemary2 tbsp. minced parsleyVinaigrette Dressing: oil, vinegar, a touch of mustard, salt and pepper Method:Combine all ingredients except dressing in a bowl. Toss with dressing. Yield: Serves 4.
