POTATO & GARLIC SOUPIngredients: 8 medium potatoes, cut into 1/2" cubes1 large carrot, chopped2 garlic cloves, peeled1/2 lb. bulk Italian sausage1 small onion, chopped1/4 c. butter or margarine1/4 c. all-purpose flour8 c. milk2 tsp. fresh parsley, minced1 1/2 tsp. salt1 tsp. chicken bouillon powder (or 1 cube)1/2 tsp. seasoned salt1/4 tsp. pepperPlace potatoes, carrot and garlic in Dutch oven, cover with water and bring to boil. Reduce heat; cover and simmer for 15-20 min. or until tender. Drain. Place 3 cups of the potato mixture in a bowl and mash. In skillet, cook sausage and onion over medium heat until meat is just cooked; drain and set aside. In soup pot, melt butter, stir in flour until smooth and gradually add the milk. Bring to boil; cook and stir for 2 min. or until thickened. Add parsley, salt, bouillon, seasoned salt and pepper, mix well. Add mashed potato mixture, cook and stir until heated through. Add remaining potato mixture and sausage mixtures, heat through. Serves 12. |
