OVEN-BARBECUED CHICKENIngredients: 2 Tbsp. butter1 Tbsp. oil3 1/2 lb. chicken, cut upSalt & pepper to taste1/2 c. mushrooms, chopped1/2 c. chopped onion1 c. ketchup1 c. water1/4 c. lemon juice2 Tbsp. vinegar3 Tbsp. Worcestershire SauceDash of Tabasco2 Tbsp. brown sugar1 tsp. salt1/2 tsp. dry mustard1/2 c. chopped celery2 Tbsp. chopped parsleyHeat butter and oil in heavy skillet. Add chicken, brown well. Place chicken in 2 1/2 qt. casserole, sprinkle with salt and pepper. Saute mushrooms gently in chicken drippings for 2 minutes. Remove, drain well and sprinkle over chicken. Cook onion in drippings until golden. Combine ketchup, water, lemon juice, vinegar, Worcestershire Sauce, Tabasco, brown sugar, salt and mustard, stirring until smooth. Stir in celery and parsley, cover and simmer 30 minutes. Pour sauce over chicken pieces. Cover and cook at 325F. for 1 hour or until chicken is tender. Serves 4. |
