CHICKEN CACCIATOREIngredients: 2 lbs. chicken piecesOlive oil1 can tomato paste1/4 c. water1/4 c. dry red wine1/2 tsp. thyme1 Tbsp. Worcestershire sauce1 can mushrooms (or equivalent amount fresh, sliced)2 cloves garlic, minced1 tsp. oregano1/4 tsp. salt1/2 medium green pepper, cut in strips1/2 c. chopped onionBrown chicken in oil, drain. Add remaining ingredients. Cover and cook over low heat for 45 minutes, stirring occasionally. Uncover and cook until sauce thickens to desired consistency. Serves 4–6.
