Pickled Herring E-mail

 

PICKLED HERRINGIngredients: 10 herrings (milkers)4 onions, sliced1 lemon, sliced1 Tbsp. vegetable oilWash herrings well, soak overnight in cold water. Remove head, tail and gills. Pull milkers out and reserve for brine. Cut in pieces. Place layer of herring, layer of onion slices, layer of milker and lemon slices. Repeat layers till herring and onion are all used.Brine: 2 c. water1 c. vinegar2 Tbsp. sugar1 Tbsp. pickling spiceBay leavesBoil ingredients together, cool and pour over herring. Add vegetable oil, cover and let stand at least 2 days.
