Pumpkin Muffins Recipe E-mail

 

PUMPKIN MUFFINSIngredients: 1 c. canned pumpkin1/4 tsp. soda1/2 c. shortening1 1/4 c. sugar2 eggs2 1/4 c. flour2 1/2 tsp. baking powder1/2 tsp. salt1/2 tsp. nutmeg1/2 tsp. ginger1/2 tsp. cinnamonPreheat oven to 375F. Stir soda into pumpkin. Cream together sugar and shortening. Add eggs. Sift together dry ingredients and add alternately with pumpkin to the shortening. Grease muffin tins and dust with flour, fill 2/3 full. Bake for 20-25 minutes. Yield: 18 muffins.
