ORANGE CUPCAKESIngredients: 1 c. sifted enriched cake flour2 tsp. baking powder1/4 tsp. salt1/4 c. shortening1 tsp. grated orange rind3/4 c. sugar1 egg1/4 c. orange juice1/4 c. evaporated milkMix and sift flour, baking powder and salt. Cream shortening with orange rind. Add sugar gradually and cream until fluffy. Add egg and beat until well blended. Mix the orange juice and evaporated milk. Add flour mixture to creamed shortening alternately with juice mixture, beginning and ending with flour. Fill well greased muffin tins 1/2 full. Bake at 375F. until golden brown, about 20 min. Yield: 15.
